Pop Up Pancakes!!!

As you can probably guess...I LOVE BREAKFAST FOOD! Here is another awesome take on pancakes!!! This is not my recipe, but it was fetured on "Make and Take". Sorry...I kinda cheated and copied and pasted for you all. I just didn't want to mess it up...and seriously...I need to get to the store. This is an easy way for me to look up the recipe when I'm at the store. Enjoy!!!
Pop Up Pancake Recipe – makes 24 muffins or fills a 9×13 baking pan

1 cup milk
1 cup flour
6 eggs
1/4 cup melted butter
dash salt
Preheat oven to 400* and grease your muffin tins
1. I like to mix all the ingredients in my blender. I have tried to whisk it or even use my small electric mixer, but a blender seems to do the best job getting it smooth.2. Pour the mix into your greased muffin tins. Or your baking pan.3. Bake them for 15 minutes in a 400* oven, or until puffy and golden on top. Use a knife to pop or pry them out, hopefully they were greased well enough and should pop right out. They puffiness will die down as they cool, and they become more like a cup.
Now they are ready for toppings. I love syrup, powdered sugar, and fruit. You could even use fresh Strawberry Jam. We usually load it all on and dive in. What do you use to top your pancakes with? Maybe peanut butter or honey?Featured at Make and Takes

Direct from the Anderson kitchen...

Ok...so I promised Elmo show pictures. I will post those later tomorrow in a different post. Unfortunately, I can't promise high quality photos. Darn it! Funny thing happened on the way to the Qwest Center. My battery in my camera died. Dumb me didn't plug my camera battery in when I got home yesterday morning from work. OH...I had time to put the snacks...that we DIDN'T eat in a bag to take to the show, but I totally blew off my camera battery.

In any case, so...what's this post going to be about if it isn't going to be a discussion about the Elmo show we went to yesterday? Well, Megan V. gave me an idea to post a meal from the Anderson familiy kitchen each week. Last week it was smiley face pancakes...yummy, yumm, yum...this week it is....*drumroll please*....

SALMON PATTIES FROM TRADER JOE'S!!!!

Ok...first off...YUM! They may not look the most appetising, but...Ummmm...YUM!!! Oh...I said that didn't I?! I took some salmon seasoning from Hy-Vee and sprinkled it on frozen salmon patties. I turned the oven on to 400 degrees and cooked them till the salmon flaked when forked! So, so, so good. Here are a few pic's of my meal! Hope you enjoy! Really...my photography skills do not do this meal justice. Not only was it AWESOME TASTY...it was AWESOME GOOD FOR US!!! I do have to say that neither one of the kids opted for it...salmon isn't their cups-o-tea. Normally I make them eat whateva I make, but this night I didn't fee like arguing with either one of them! Oh well...more for me!!! OH YEAH! This is another AWESOME thing I've found recently. It totally rocks. Five minutes in the microwave...and done!!!

DAY THREE...DUDE...I'M ON A STINK'IN ROLL!!!

Lordy, Lord!

So here we are! Monday, January 3...the very start to the work week. Some of us... ahem...Warren have today off as well. Lucky him but...some of us shouldn't complain, right? I only work three nights a week and I guess I shouldn't fuss. Three nights a week has kinda become my norm. It is a short work week normally for me...but it always seems longer than it sounds when you work 12 hours and not 8 hours. I never anticipated that being like that, but I'm not ready to going back to work 5 days a week. Yuck!

Anyway, the new year weekend was pretty eventful for us. We didn't do much of anything, but we did try out my new smiley face non-stick pancake pan. FUN! It was good times but I think I ate a bit too much. It is practically bedtime and I still feel stuffed from brunch at 1 p.m. I sure hope I didn't eat under cooked egg whites, pancakes, or turkey sausage. No one else feels like this...so it must be me. AWESOME! Maybe it's a sleep issue.

My kids sleep through the night, but my dang night body still knows the night before I have to go back to work. I normally toss and turn the night before I go back to work. Always have and I guess I probably always will.

Anyway, back to our homemade brunch! I snapped a few pictures to show you all...Megan Vogt...that I still can cook like a normal person.

So here is the yummy pancake batter cooking a way on my new pan! Thanks a bunch Margaret! I wasn't sure how to cook the other side of the pancake...so I pulled out my other skillet!

Thank goodness my counter top skillet heats up quickly! I took the pan off the stove top and flipped them onto the counter top skillet! WOOHOO! How cute!!!

Here they are ready to start munching on! They may look tiny, but they were thick!!!

So here was my bad idea for the afternoon...dude...if I can cook pancakes on this thing...maybe I can cook egg whites!? Wouldn't that totally rock...yeah...not such a great idea. They don't flip! LOL!

Ok...so maybe I cheated a bit. Not everything has to be made from scratch!!!
